- 3 ripe bananas, mashed
- 2 eggs
- 1 cup Greek yogurt (plain, non-fat)
- 1/4 cup honey or sugar-free syrup
- 1 tsp vanilla extract
- 1 1/2 cups oat flour (or blended oats)
- 1 scoop vanilla protein powder
- 1 tsp baking soda
- 1 tsp cinnamon
- Pinch of salt

Optional: Dark chocolate chips or chopped nuts (1 cup each)

1. Preheat Oven: Preheat to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.

2. Mix Wet Ingredients: In a large bowl, combine mashed bananas, eggs, Greek yogurt, honey, and vanilla extract. Mix until smooth.

3. Combine Dry Ingredients: In a separate bowl, whisk together oat flour, protein powder, baking soda, cinnamon, and salt.

4. Mix Together: Gradually add the dry ingredients to the wet mixture and stir until just combined. Avoid overmixing!

5. Add Extras: Fold in chocolate chips or nuts if using.

6. Bake: Pour the batter into the prepared loaf pan. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

7. Cool & Serve: Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
