Pastry for two crust pie
¾ cup sugar
¼ cup flour
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
Dash of salt
slice enough apples to nearly fill 9" pie pan
2 Tablespoons butter

Directions:
Directions:
Prepare pastry dough and line bottom of 9" pie pan.
Mix sugar, flour, nutmeg, cinnamon, and salt.
Peel and slice apples. Place apples in water with lemon juice to keep apples from turning brown. Drain well before adding to dry ingredients.

Stir sliced apples into the dry mixture. When well mixed, pour into pie pan and arrange apples around the edge of the crust. Dot with butter.
Cover with top crust and seal the top to the bottom by dotting the bottom crust with ice water, then pinch the two crusts together. Cut slits into the top crust.
Heat oven 425º (You can also turn down the oven temperature to 375º if the crust is getting too brown and the juice is still not bubbling up in the slits in the crust.
Bake until crust is golden brown and juice begins to bubble through the slits in the crust, 40-50 minutes.
Watch that the edges of the crust to not become too brown by rotating the pie occasionally in the oven.
