1 large red onion
2 cups hot boiling water
3/4 cup fresh lime juice
2 tbl apple cider vinegar
1 tea salt
1 tea honey

Optionals
garlic clove(s), sliced thin
jalopeno
cumin seeds (1/4 tea)
black peppercorns
1 bay leaf
Mexican oregano(1/4 tea)
all spice berries(1/2 tea)
pinch of red pepper flakes

Directions:
Directions:
Place sliced red onions in a colander and then in a bowl. Pour the hot water over them. Press them in the water to make sure they are fully submerged. Let sit for about 45 sec to a minute.
Transfer the drained onions to a jar or bowl with a tight fitting lid. Pour fresh lime juice in with the apple cider vinegar and salt. I added a tea of honey as well and then stirred.
Let sit for a few hours and then serve.
These onions are great for tacos, which is what I originally made them f or but then Ive added to sandwiches and my breakfast burritos. They are delicious.
