1 pound of chicken
One Bayleaf
One medium chopped onion
One cup of chopped carrots
One cup of celery, chopped
One or two whole tomatoes or one cup of canned tomatoes
Four or five cubed raw potatoes
1 pound of cubed plain pressed tripe
Salt and pepper to taste

Add chicken pot to cold water 6 cups of cold water. Bring to a boil skim off the rat add salt and pepper to taste. Add onions, carrots, celery, Bayleaf tomatoes, and bring to a boil then simmer for one hour the last 20 minutes of cooking at the cubed, potatoes and cubed tripe. Bring to a boil and then simmer 20 minutes until tripe and potatoes are soft

Important important: I have never in my life made tripe soup. My mom used to make it. My dad used to love it, but I make the original Babchi soup. To make the Babchi soup, eliminate the flaki and one potato and you cook it one and a half to two hours.
Make the noodles separately. My mom always insisted on ladeling the cooked noodles into the bowl and then pouring the soup on top of it. Never add the noodles to the soup. It makes them too soggy.

My grandmother used to make this soup on a wood-burning or coal fire stove. Every time we came to visit she had Bachi soup simmering on the back burner. It was the best thing you ever tasted in your life, and I have yet to be able to replicate due to the fact that I don’t have a wood-burning or cold stove
