2 lbs. boneless, skinless Chicken Thighs
1 cup Pineapple Juice
½ cup Soy Sauce
⅓ cup Brown Sugar
¼ cup Honey
3 tbsp. Ketchup
2 cloves Garlic, minced
1 tsp. grated Ginger
½ tsp. Chili Flakes (optional)
¼ cup Cornstarch
¼ cup Water

Directions:
Directions:
In a bowl, whisk together pineapple juice, soy sauce, brown sugar, honey, ketchup, garlic, ginger, and chili flakes. Set aside.
Place chicken thighs in crock pot. Pour sauce over chicken and coat well. Cook on low 6-7 hours or high 3-4 hours.
About 30 minutes before serving, whisk together cornstarch and water to make a slurry. Stir into crock pot to thicken sauce.

You can leave chicken whole, cut or shred before serving.
