4 c. frozen green peas, thawed
1/2 c. diced red onion
1/2 c. diced celery
1/2 c. diced cooked bacon
1/2 c. shredded sharp cheddar cheese
1/4 c. chopped fresh parsley
1/2 c. mayonnaise
1/4 c. sour cream
1 tbsp. apple cider vinegar
1 tsp. Dijon mustard
Salt and black pepper, to taste

Prepare the Peas: Place the peas in a large mixing bowl and cover with hot tap water. Let stand for 15-20 minutes. Drain well in a colander.

Add Vegetables and Bacon: Add the diced red onion, diced celery, cooked bacon, shredded cheddar cheese, and chopped fresh parsley to the bowl with the peas.

Make the Dressing: In a small bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, Dijon mustard, salt, and black pepper until smooth and well combined.

Combine: Pour the dressing over the pea mixture and gently toss until all the ingredients are evenly coated.

Chill and Serve: Cover the salad and chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together. Serve cold.
