Ingredients: 1 Yellow Cake Mix + the ingredients to make it
ADDITIONS: 1 tsp Cinnamon 1/2 tsp Nutmeg 1 cup Sugar 1/2 cup Brown Sugar, packed 2 cups Carrots, gratted 1-8 ozs can Pineapple, drained 1/2 cup Coconut, shredded
FOR THE PAN OR DISH: Spray Oil Dusting Flour
FROSTING: 8 ozs Cream Cheese, softened 2 tbs Milk 1 cup Powdered Sugar

Directions:Make the cake mix according to pkg directions, set aside for later. Combine the carrots, brown sugar, pineapple, sugar, nutmeg, cinnamon and add it to and coconut and combine it with the cake mix. Mix until well mixed and blened. Pour into 2-3 baking dish or pan sprayed with oil and dusted with flour. Bake according to pkg directions or until a toothpick in the middle comes out clean. Wisk briskly together all ingredients for frosting until fully. Frost the top of 2-3 layer of the cake and stake the layers on each other until the 2-3 are on top to make the cake as tall as desired. Frost the sides, cut, serve and ENJOY!
