3 large egg whites
1 lb. almond paste grated (2 cans)
1 cup sugar
pinole nuts ( purchased at local bakery or amazon)
1t. canola oil

Directions:
Directions:
1. Take out eggs the night before baking.
2. Beat almond paste with sugar at low speed.
3. Slowly beat in egg whites and canola oil.
4. Pour pinole nuts in a bowl.
5. Generously grease cookie pan.
6. Take a teaspoon of dough, generously top with pinole nuts.
7. Carefully put (push with finger) on cookie pan. Add more pinole nuts if wanted.
8. Place cookie pan in another cookie pan. You are baking these cookies in two pans so they won’t burn.
9. Bake in a 350* oven for 20-22 minutes.
10. Store in air-tight container
