1 tablespoon vegetable oil
1 medium onion, chopped
¼ teaspoon garlic powder
2 medium tomatoes, finely diced
1 medium green pepper, chopped (about 1 cup)
2 medium stalks celery, sliced (about 1 cup)
½ teaspoon dried oregano
1 (15 oz.) can red beans, rinsed and drained
4 cup cooked brown or white rice

Directions:
Directions:
1. Place oil in large skillet and heat. Add the onion. Saute until soft.

2. Add the garlic, tomatoes, green pepper, celery, and oregano. Cover the skillet; simmer the mixture (bubbling lightly) for about 5 minutes or until the vegetables are crisp-tender.

3. Add the beans and simmer, stirring occasionally, until heated through. Add salt and pepper, if desired, to taste.

4. Spoon the vegetable-bean mixture over rice.

5. Refrigerate leftovers
