8 large carrots
2 c. finely grated Parmigiano Reggiano
3 tbsp. olive oil
2 tsp. paprika
¼ tsp. onion powder
1 tsp. red pepper flakes
1 tsp. cumin
1 garlic clove, grated
2 tbsp. chopped fresh parsley
salt to taste

Preheat oven to 400. Peel carrots and cut them in half long way then cut those halves in half so you have a flat side. In a bowl, add olive oil, paprika, onion powder, red pepper flakes, cumin, garlic, parsley, salt, & whisk.Toss cut carrots in marinade and set aside.

In a baking sheet, sprinkle some grated parmesan all over then dip the flat sides of the carrots into parmesan. Lay out all carrots on baking sheet cheese side down. Roast for 25 minutes and remove from the oven. Let cool for a couple of minutes and use a spatula to scrape your carrots off baking sheet.
