3 pkg frozen spinach, defrosted and liquid squeezed out
5 slices challah, dried out, slightly dampened and excess water squeezed out
4 eggs
1 lb. cottage cheese (or Vegan Feta)
1 c. Parmesan (or Vegan Parm)
3 T. EVOO
Oregano, garlic, salt and pepper to taste

1. Preheat oven to 350º and lightly grease a 9x13 pan
2. Mix all ingredients except oil.
3. Pour into prepared pan and drizzle with oil
4. Bake approximately 40 minutes or until set
5. Let sit 10 minutes before serving

This recipe from Aunt Georgine was one we used year after year for our Break-The-Fast after Yom Kippur. When Henry's dairy allergy became such that he couldn't eat even cooked dairy (like this or pizza), we began making our own feta and Parmesan cheeses. We are so used to the amended recipe and love it... but we love having Aunt Georgine's original recipe!!
