"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Ingredients:
1-2 cucumbers, peeled and sliced thin
1 c. water
¼ c. rice wine vinegar
¼ c. Kosher dill pickle juice
1 tsp. sugar
1 tsp. seasoned salt

Directions:
Directions:
Mix all ingredients together and add sliced cucumbers. You can put this back into a large pickle jar. Let stand at least 24 hours for flavor to develop.

Personal Notes:
Personal Notes:
Mom (Juanice) used to make these when she lived in Prescott. She would keep a jar of these in the fridge for Jim, primarily. Mom always called them Jim’s Cucumbers when I would come to visit, but I ate them anyway. We consumed them quickly and often would just slice another cucumber to put into leftover liquid. This only works a time or two as the mixture weakens.
