1 pkg (32 oz each) frozen tater tots

1 pound ground beef

1 package Taco seasoning

2 cups shredded Mexican blend cheese

1 can black beans, drained and rinsed

1 can corn, drained

1 lb (16 oz) VelveetaŽ, cut into cubes

1 can (10 oz) Ro*TelŽ Original Diced Tomatoes & Green Chilies, undrained

Sour cream

Fresh cilantro, chopped, for garnish

Salsa or hot sauce

Preheat oven to 450°F. Bake tater tots as directed on package. Top with shredded cheese; bake 5 minutes or until melted.

Cook ground beef, drain grease. Cook with taco seasoning to package directions.

Combine black beans and corn in microwave-safe bowl, cover and microwave on high until heated through, about 3 minutes. Set aside.

In a separate microwave-safe bowl, combine Ro*TelŽ and VelveetaŽ and microwave 5 minutes, stirring after 3, until completely melted and queso is well blended.

Spoon taco meat, bean mixture, queso, sour cream and cilantro over tots and serve.
