Pampushky Dough:
8 cups flour
2 pkgs yeast
3 cups milk
2 Tbsp butter
½ cup sugar
4 eggs
1 tsp salt

Poppyseed Filling:
1 cup poppyseed
⅓ cup honey or sugar
1 cup raisins (optional)
2 egg yolks
1 tsp butter

Directions:
Directions:
Start oil in a pot. 375F.

Dissolve yeast as per package instructions. Let stand for 10 minutes.

In a large bowl, put in part of the flour, making a well in the middle.

Beat eggs until lemon-colored, add in melted butter, milk, sugar, and salt. Add this mixture to the well in the flour along with the yeast.

Mix well and knead about 10minutes. Cover and let rise until double in size. Approx 45 min.

While waiting you can make the Poppyseed Filling:

Cover the poppyseed and raisins (optional) with boiling water for 3-5min. Drain. Squeeze any remaining liquid. Put poppyseed mixture into a grinder and grind until fine. Add in the honey or sugar, beaten egg yolks and butter and blend together. Set aside.

Once the dough has doubled in size, punch it down to original size by kneading lightly. Let rise again for about 20 min.

Take a small amount of dough, roll onto a lightly floured surface. It must be fairly thick. Cut out rounds. Place a small amount of filling in each round and bring edges together and pinch well to seal tightly.

Place the pampushky donuts seam side down on a lightly floured surface, cover and let rise again for approx 30 -45 minutes.

Once oil is at 375F you can start deep frying the donuts for approx 3 minutes per side. They should turn golden brown. Once they are done transfer to a paper towel lined sheet.
