3 ripe bananas
6 Tbsp melted shortening or vegetable oil
1/2 cup sugar
1 tsp salt
1 egg well beaten
1 tsp vanilla
1-1/2 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 cup chopped walnuts (optional)

Directions:
Directions:
Mash bananas; add shortening, sugar and salt. Beat well. Add egg and beat again. Sift flour, baking soda and baking powder; mix in well. Add nuts and mix lightly. Drop by spoonful into buttered or papered muffin pan.
Bake in pre-heated oven at 350º for 15 to 20 minutes.
