3 lbs Yukon gold potatoes
6 hard boiled eggs
3-4 ribs celery, diced
1 Vidalia onion (chopped)
1 Green Onion
1/2 teaspoon paprika (optional)

FOR THE DRESSING:
1.5 cup mayonnaise
1/3 cup sweet relish
2 tablespoon yellow mustard
salt /black pepper, to taste

-Peel potatoes and chop into bite-sized pieces. Add potatoes to a large pot and over with cold salted water by one inch.
-Set over high heat and bring to a boil. Cook until fork tender, about 15 minutes. -Drain and set aside to cool.
-Prick a small hole in the bigger end of the egg.Go through the shell but try to avoid the egg membrane. This will make pealing the eggs easier.
-Place the eggs in a medium size pot and cover the eggs with water and bring to a boil. Boil for 10 mins.
-While eggs are boiling prepare an ice water bath.
Drain eggs and place eggs in ice water for 6 mins.
-Then begin pealing the eggs.
Rough chop boiled eggs and place them in the bowl with the cooked potatoes.
-In a large bowl, whisk together the mayonnaise, relish,mustard, salt and pepper.
-Add the potatoes&eggs, celery, and onion and stir to combine. Adjust seasoning as needed.
-Chop and sprinkle green onions on top for added color.
-Chill until ready to serve, at least 2 hours.
