2 lbs. summer squash (zucchini/yellow squash), cut into ¼” slices
2 ½ tbsp olive oil
1 ¼ tsp salt
½ tsp black pepper
1/3 cup parmesan cheese, grated
1/3 cup panko breadcrumbs
¼ tsp garlic powder
2 tbsp fresh parsley, finely chopped

Preheat oven to 350º. Lightly grease/spray 9” square baking dish. Cut squash into thin, ¼” slices. Sprinkle ½ tsp salt over squash. Let sit for 10 minutes and dab with a paper towel to remove excess moisture. Alternate placing zucchini and yellow squash in dish. Drizzle olive oil over squash, then salt and pepper to taste. In a small bowl, combine parmesan cheese, breadcrumbs, and garlic powder, then sprinkle over squash. Cover dish with aluminum foil and bake for 30 minutes. Remove foil, turn heat to high broil, and broil for an additional 5-7 minute or until breadcrumb topping starts to turn golden brown. Serve with parsley garnish.
