1 Recipe Freezer Mashed Potatoes (see side dish recipes)
1 TBL olive oil
1/2 medium onion, finely chopped
1 tsp garlic
2 carrots, shredded or diced
2 lb lean ground beef
1 TBL Worcestershire sauce
1 tsp salt
1 tsp pepper
3/4 cup beef broth
1 TBL flour
1/2 cup frozen corn
1/2 cup frozen peas

Directions:
Heat large frying pan over medium heat. Add the olive oil and onions. Cook for 2 -3 minutes until onions start to become translucent. Add carrots, Cook for additional 5 minutes. Add ground beef and cook until beef is no longer pink. Drain excess fa. Add worcestshire sauce, salt, and pepper, Sprinkle flour over the top of the mixture and pour in beef broth. Stir and allow to thicken,. Add vegetables. Spoon meat into 9X13 pan. Spoon mashed potatoes over top of the meat. Make the layer as thick as you want, but at least 1/2 inch. Cook 350 until heated through and potatoes are slightly brown, about 20-25 minutes. Sprinkle with shredded cheddar cheese while hot, if desired,.

To freeze: Wrap unbaked casserole in aluminum foil and put in freezer. Thaw overnight in the refrigerator before baking,.

I substitute a bag of frozen steamable mixed vegetables (carrot, green beans, corn) for the vegetables in the recipe. Microwave according to package directions. Drain the water well before adding to the meat.
