1 Tbs Olive Oil ( I used garlic & herb infused)
1 lb kielbasa sliced into ½-inch quarter pieces
4 cloves garlic minced
1 lg sweet onion finely diced
1 cup carrots (I used frozen slices)
4 cups potatoes cubed
6 cups chicken stock ( I used Knorr)
2 cups heavy cream or whole milk (I used a mixture of of each)
¼ tsp thyme
¼ tsp black pepper
½ tsp salt ( if needed)
Parmesan cheese (optional)
Chedar cheese (optional )

Directions:

-Heat olive oil in a 4-6 qt Dutch oven or soup pot over medium-high heat. Add the sausage and onions cook for 5-6 minutes, stirring often.
Add the carrots, and potatoes to the pot. Sauté for another 5 minutes.
Pour in the chicken stock and bring the mixture to a boil, then reduce the heat, cover, and let it simmer for about 15 minutes, or until the potatoes are tender.
Temper milk and add to pot. Stir thyme, pepper and salt if needed.
-Cook over low heat for 5-10 minutes.

If you use knorr chicken bouillon, you will likely not need salt so wait to add it to the finished product if needed.
