2 pounds ground beef (or chicken)
2 large sausages (optional)
Onion chopped
Bunch of spinach
Bell pepper chopped
2 cloves garlic pressed or chopped
1/2 teaspoons italian seasoning or handful fresh basil chopped
1 container cottage or ricotta cheese
4 cups or more of shredded cheese
Mozzarella, provolone, cheddar, marble
any mix you love
Shredded Parmesan 1/2 cup-1 cup
1 large can spaghetti sauce
1can stewed tomatoes or two tomatoes chopped
1 box lasagna noodles cooked

Brown beef and sausage until brown and crumbly
Sautee remaining veg slightly
If using frozen spinach thaw and drain before chopping
Add all vegetables to meat
Layer cooked noodles in lasagna pan.
Add cottage cheese to bottom layer of meat. Top with noodle and cheese and continue finishing last layer with lots of sauce and cheese.
Cook 350 45 minutes covered with foil and remove last 15 if you like a crusty topping.

You can use as many vegetables as you want or add the frozen vegetables mix (carrot,onion, pepper,celery) pasta sauce medley.
You do not have to use sausage but we like the additional flavour and the moisture if using chicken instead of beef

Any sausage works but we like traditional or Italian.
If you dont like cottage or ricotta just avoid it but we recommend adding a little extra cheese .
Any cheese works but mozzarella has a good melt so it should be in that mix

Fun times you can roll these up and top with sauce and cheese for lasagna rolls.
Crock pot will do it too, 1 hour high 2-3 hours on low .

Spice it how you like it but when the markets open we recommend fresh basil.
