4 chicken breast or one whole rotisserie chicken or small market chicken cooked in the oven or Insta pot
4 bell peppers
One package of tortillas, white or your choice
One jar of salsa
3-4 cups shredded cheese
One large onion, chopped optional
For tomatoes, chopped optional
To jalapeño peppers, chopped optional
Jar of enchilada sauce, optional

Cook chicken and shred or chop lately sauté peppers and onion, wrap chicken and peppers inside of tortilla shells
Tortilla shells in a lasagna pan, roasting pan or bottom of a crockpot top of the layer of salsa and shredded cheese
If you're doing it in the crockpot, you will have to layer if you're doing it in a big roasting pan you might not have to layer
Cook until heated on low for two hours in the crockpot or high for one, or 45 minutes covered in a 350° oven

Enchiladas is one of our favourite family meals. You can use any kind of leftover chicken or turkey that you have and any mix of bell peppers that you would prefer. You do not have to add the onions, but we find that they give it a lovely taste and sweeten up as their sautéed.
You can use your homemade salsa or you can buy a large jar of the store or get a canned version from your local farmers market
Sometimes we add some taco seasoning or additional spices or enchilada sauce to the mixture if the chicken is a little on the dry side but you do not have to do this
Layered in the crockpot, it comes out similar to Mexican style lasagna
You can add cilantro or fresh parsley, if you wish cilantro is not for everybody, but it is is a fantastic antioxidant and very healthy for you. If you love, cilantro if you love spicy, add your hot peppers on the top.
If you're a tomato lover put sliced cherry tomatoes or tomatoes on top underneath your cheese
You can serve this with sour cream or a side of ranch dressing or straight up enjoy!
