2 pounds shrimp in the shell
2 T oil, not olive oil
2 T flour
1 C each finely chopped onion, green onions, green bell pepper, celery
1 T finely minced garlic
1 C cooked ham cut into 1/2 inch cubes
2 C crushed tomatoes
1/2 tsp dried thyme
1 tsp dried oregano
1 C uncooked long graine white rice
Salt and black pepper to taste
5 C seafood broth
1/2 C finely chopped green onions for garnish

Directions:
Directions:
Peel and devein shrimp.
Heat oil in large saucepan with a heavy bottom over medium heat
Add flour and cook, stirring constantly, until lightly browned. Do not burn!*
Add onion, green onions, green pepper, celery and garlic. Cook, stirring until just softened.
Add ham and stir.
Add tomatoes, thyme and oregano, bring to a boil. Stir in uncooked rice, add salt, pepper and broth. Reduce heat to medium low and simmer uncovered about 25 minutes.
Add shrimp and stir. Cook about 10 minutes longer.
Serve in bowls with chopped green onions to garnish.
