1 T oil
2 chicken breasts whole, skinless, boneless
1 14 oz can diced tomatoes with juice
1 C chili sauce
1 green bell pepper, chopped
2 stalks celery, chopped
1 onion, chopped
2 cloves garlic, minced
1 tsp dried basil
1 tsp dried or 1 T fresh parsley
1/4 tsp cayenne
1/4 tsp salt

White rice, cooked

Directions:
Directions:
Heat pan over medium high heat.
Add oil and chicken and cook until chicken reaches 165 degrees, about 3-5 minutes.
Reduce heat to medium and add tomatoes in juice, chili sauce, green pepper, celery, onion, garlic, basil, parsley, cayenne and salt.
Bring to a boil, reduce heat to low and simmer, covered, for 10-15 minutes.

Serve hot over rice.
