1/5 Tbs Butter
1/2 Onion, Diced
1 Tbs Olive Oil
( I use Roasted Garlic)
1/3 c. All-purpose Flour
2 c. Whole Milk
1/2 c. Heavy Cream
2.5 c. Chicken Broth
(I use Knorr)
1c Chicken Breasts, Cubed
8 oz. Ham, cubed
4 tsp. Stone Ground Mustard
6 oz. weight Swiss Cheese
1/4 c Green Onion, Chopped
Garlic & Butter Crutons

Directions:
Directions:
Add olive oil in a medium-sizedpan with onion and cook over medium-low heat until tender, about 10 minutes; add butter.
Once butter is melted, Sprinkle in flour and whisk until smooth. Cook for 2 minutes.

Pour in half each of the milk, cream, and chicken broth and whisk until smooth. Gradually add the rest. Bring to a boil, stirring often. Boil and stir 1 minute.

Remove from heat and add chicken, ham, mustard, and Swiss cheese. Stir until cheese is completely melted. Taste and add salt and pepper as needed.

Serve immediately with croutons and green onions.
