6 hard boiled eggs, peeled
1 pound sausage of your choice
1 onion, thinly sliced
1 cup white vinegar
1/4 cup sugar (I am going to try monkfruit since this isn't a processed canned item)
1 cup water
1 T. salt
1 tsp. black peppercorns
1 tsp. mustard seeds
1 tsp. red pepper flakes
Hot pepper sauce to taste, optional
three jalapeno peppers, sliced

Directions:
Directions:
In a medium saucepan, combine the white vinegar, water, sugar, salt, peppercorns, mustard seeds, and red pepper flakes and hot sauce, if using.

Bring to a boil and reduce and simmer for 5 minutes.

Assembling the jar: Place the hard boiled eggs, sliced sausage, onion, and peppers in a clean jar. Carefully pour the hot vinegar mixture over the eggs, sausage, and onions. Make sure everything is sugmerged.

Allow to cool to room temperature and refrigerate.
