1 cup cup-for-cup gluten-free flour blend

1/4 teaspoon salt (optional)

Water (about 1/4 to 1/2 cup)

Extra flour for rolling

Note: you can also use King Arthur Measure for Measure Gluten-Free Flour: All-Purpose 1:1 Substitute for Wheat Flour

Mix the Dough:

In a bowl, combine the cup-for-cup gluten-free flour and salt (if using).
Gradually add water, starting with 1/4 cup, and mix until a dough forms. Add more water as needed until the dough is soft but not sticky.
Knead the Dough:

Knead the dough gently for a minute or two. If it feels sticky, you can sprinkle a little extra flour.
Rest the Dough:

Cover the dough with a damp cloth or plastic wrap and let it rest for about 20-30 minutes. This helps the flour hydrate and improves texture.
Divide the Dough:

After resting, divide the dough into small balls (about the size of a golf ball).
Roll the Rotis:

Dust a clean surface with a little extra flour. Take one dough ball, flatten it slightly, and roll it out into a circle about 6-8 inches in diameter. Use more flour as needed to prevent sticking.
Cook the Roti:

Heat a tava or non-stick skillet over medium-high heat.
Place the rolled roti on the hot tava. Cook for about 30 seconds or until small bubbles form.

Flip and cook for another 30 seconds. Press gently with a spatula to help it puff up.
Flip again and cook for a few seconds until both sides have light brown spots.

Remove the roti from the pan and keep it warm in a container lined with a cloth.
Repeat with the remaining dough balls.

Serve warm with your favorite dishes!

Adjust the water amount based on the specific flour blend you use, as some blends may require more or less.

If the roti doesn’t puff up, it’s okay! It will still taste delicious.
