Directions:Preheat oven to 350º 1) Mix all the base ingredients together. If you are going to make multiple flavors, now is the time to evenly divide your batter.
With the peach/pecan, you will just simply add all the add-in ingredients and mix well.
2) with the Blueberry/walnut mix everything but the blueberries into the base mix and mix well. You will place the blueberries on top after scooping the batter into the muffin tins to avoid making the batter turn a gray color if you were to mix it in now.
3) Banana Foster : Pour the base into the muffin tins. Slice the banana up. In a skillet heat the coconut oil, butter, honey to a boil. Add the bananas in. Allow them to cook for about 2-3 mins untill a golden brown. Flip and do the same to the other side. Now place a couple of bananas in each muffin tin on top of the oatmeal. Spoon a little sauce over each muffin. Bake muffins for 20-25 mins |
