1/2 cup carrots (chopped)
1/2 cup onion ( chopped)
1/2 cup broccoli (chopped)
1/2 cup mushrooms (chopped)
1/2 cup frozen peas
1 can water chestnuts
2 cups brown rice
3 cups water (divided 2cups & 1 cup)
1 Tbs Knorrs chicken broth bouillon ( add to the 2 cups of water)
2 Tbs butter
2 Tbs EVOO
1 Tbs minced garlic (added to the 2 cups of water)

Directions:
Directions:
1) Cook brown rice according to directions. 2 cups rice/2cups chicken broth mixture cook for 12 mins.
2) Heat EVOO in med frying pan. Chop all veggies into small pieces. Pushing everything but the peas into the hot skillet and sauté for 3 mins. Cut heat off and wait for rice to finish.
3)Add fully cooked rice to the frying pan and mix together the veggies and rice.Add frozen peas. Cook untill rice is tender. Continue to add water as needed
4) top finished rice with cut cold butter sprinkled on top and a very small amount of EVOO drizzled on top and then everything mixed together one last time.
