3 pounds spareribs, cut crosswise and then into individual ribs
2 c. water
1/3 c. soy sauce, divided
1 tsp. salt
1 clove garlic, minced
2 tbsp. brown sugar
1 tbsp. cornstarch
1 tbsp. sesame seeds
2 tbsp. scallions, finely chopped
1/4 tsp. ginger

In a large saucepan or kettle mix water, 1/4 c. soy sauce, salt and garlic. Place ribs in liquid and bring to a boil. Reduce heat, cover and cook over low heat for 1 hour. Remove cover, bring to boiling and cook 20 minutes more. Drain, reserving 1/4 c. cooking liquid. Mix together remaining soy sauce, brown sugar, cornstarch, sesame seeds, scallions and ginger. Place ribs and reserved cooking liquid in chafing dish or skillet placed over Sterno flame. Pour seasoned soy sauce mixture over ribs and cook, turning ribs often and spooning sauce over to glaze ribs until sauce is thickened and adheres to ribs, about 10 minutes. Keep warm in pan over Sterno flame.
