12 oz chicken breast, cut into chunks
1 cup onion, chopped
2 14-oz cans artichoke hearts, rinsed and chopped
1/2 cup plain Greek yogurt
1/2 cup Parmesan cheese, grated
1 tsp butter
1/2 tsp sea salt
2 cups cooked, whole wheat pasta
6 cups frozen spinach, thawed, liquid removed

Directions:
Directions:
Place all ingredients in crock pot except 1/4 cup Parmesan cheese and pasta. Stir.
Cook 1-2 hours on high. If your crock pot runs hot, cook on low. Stir occasionally to avoid burning on the sides.
Add remaining cheese on top. Cover and cook 5 more minutes.
Serve over 1/2 cup cooked pasta.
