2 C oat flour ( I often add 2 T. ground flax seed or chopped nuts)
4 t. baking powder
1/2 t. salt
1 1/4 C milk
2 large eggs
2 T. real maple syrup or honey
2 T. butter (or coconut oil)
2 t. vanilla extract
coconut oil or bacon fat for skillet

Directions:

Melt butter or coconut oil and cool slightly.

Whisk together flour, baking powder, salt, and flax seed if using.

Whisk together milk and egg in glass measuring cup. Make a well in center of flour mixture and pour in milk mixture. Add maple syrup, butter, and vanilla. Gently stir until no dry ingredients remain...a few small lumps are fine. Set aside 5 minutes.

Heat a couple of teaspoons coconut oil or bacon fat in non-stick skillet over medium heat. Add 1/4 cupfulls batter and cook till 2 or 3 bubbles rise to top. Turn and cook a couple of minutes more. Serve as you cook or keep warm under foil till all batter is cooked. Serve however you like pancakes. (I like them best plain.)

Freeze or refrigerate leftovers. Heat in toaster or air fryer.

I tried oat flour pancakes to cut back on gluten but actually prefer them to the wheat flour version.

This a generous size recipe...the leftovers make a great breakfast for lazy days.
