1 cup sugar
3 Tbsp Butter melted
¼ cornstarch
1½ tsp vanilla
¼ tsp salt
1-3½ oz coconut flakes (canned flakes)
3 cups of milk
4 eggs separated
9-inch pie crust (baked)
favorite whipped cream

Directions:
Directions:
Combine sugar, cornstarch, salt, and milk. Cook med to low heat stirring constantly. After mixture bubbles and thickens cook another 2 min longer.... remove from heat. Beat egg yolks slightly, gradually stir 1 cup of hot mixture into yolks being careful not to scramble the eggs. Return to saucepan and bring to a gentle boil 2 minutes longer. Remove from heat, add butter and vanilla and coconut. Mix and pour into pie shell and cool. Top with whipped topping or meringue.
