4 - 5 lb beef roast
1 pkg dry onion soup mix
1 medium onion, sliced
2 stalks celery, chopped
1 bottle chili sauce
1/2 c water
1 (12 oz) can beer

Directions:
Directions:
Put fresh or frozen roast in slow cooker. Sprinkle dry soup mix over meat. Arrange onion rings and celery on top. Combine chili sauce and water. Pour mixture around meat. Cook 8 hrs on low heat. Add beer and cook an additional hour.

Remove grease and any fat. Slice meat across grain and return to liquid. Can be frozen for later use or served immediately in buns.
