8 hard boiled eggs, peeled & cooled
½ cup mayonnaise (or more to taste)
1½ t Dijon or yellow mustard
1 green onion, thinly sliced
1 rib celery, finely diced
¼ t paprika
2 t fresh dill, finely chopped or ½ t dried
Salt & pepper to taste

Directions:
Directions:
Cut the eggs in half and place the yolks in a bowl. Finely diced egg whites. Using a fork, mash the yolks with the mayonnaise, mustard and a pinch of salt & pepper until smooth & creamy.
Add the egg whites, green onion celery, paprika & dill. Stir to combine.
