1/2 lb pork sausage (or less)
12 eggs, beaten
1 small jalapeño (opt.)
1 small onion, diced
2 or 3 small peppers, chopped

Directions:
Directions:
Sauté the veggies to taste, add to beaten eggs. Season to taste and add cheese, if desired. Add sausage and stir to combine.

Fill muffin tin cups to about 1/3 - 1/2.


Bake at 375 for about 15 minutes. Can be frozen when cooled and thawed for a quick breakfast.
