5 lbs Yukon gold potatoes
4 large eggs, hard boiled, peeled and chopped
1 T salt
3 cups mayonnaise
1 cup sweet salad cube pickles, drained (or sweet relish)
½ cup red onion, chopped
½ cup green bell pepper, chopped
½ cup celery, chopped
¼ cup flat leaf parsley, chopped
¼ cup yellow mustard
1-4oz jar diced pimento, drained
2 T seasoned rice wine vinegar
2 T lemon juice
1 T extra virgin olive oil
1 jalapeno pepper, seeded and minced
1 t celery salt
Hot sauce, to taste
½ t smoked paprika
Black pepper to taste

Directions:
Place the potatoes in a large pot of boiling water and boil until tender, about 20 min. Drain the potatoes and allow to cool for 15 min. Peel potatoes and cut into bite sized pieces. Place in a large bowl. Add the egg. Sprinkle the potato mixture with the salt and toss to coat. In another bowl, stir the mayonnaise, pickles, red onion, bell pepper, celery, parsley, mustard, pimento, vinegar, lemon juice, jalapeno, celery salt and the hot sauce together. Gently stir the mayo mixture with the potatoes. Sprinkle with the paprika & pepper.
