*12-24 good quality vanilla beans, preferably Madagascar or Tahitian
Large bottle of vodka
Large mason type jar with lid, tall enough to hold beans without bending or cutting them

Directions:
Directions:
Place the whole vanilla beans standing in the large jar with a lid. Fill jar with enough vodka to completely cover the beans. Secure lid tightly and set jar in a cool dark place for 1-6 months (do not refrigerate). 6 months is best for the most flavorful vanilla. After that point you may use the vanilla for your recipes. You may add vanilla beans or more vodka to the jar as you go to keep the beans submerged at all times. You can also use the beans for recipes. Slice the bean lengthwise and scrape the seeds out with a spoon or knife. Discard opened beans.
