Ingredients: 1-2 fresh plum tomatoes sliced 1-2 teaspoons extra virgin olive oil 1-2 teaspoons red wine vinegar salt to taste black pepper to taste 2 slices sturdy sandwich bread (hearty farmhouse or ciabatta roll) 3-4 tablespoons garlic-herb sandwich spread* 3-4 slices bacon, cooked crisp greens of choice to taste

Directions:Slice tomatoes and layer on a plate. Drizzle with a little olive oil and vinegar, sprinkle with salt and pepper and set aside.
Spread garlic-herb mayo on one side each of two pieces of bread.
Heat a pan on the stove top to medium heat. Toast bread mayo-side down in a pan until golden and crispy. Remove bread from pan and spread crispy side of bread with more mayo.
Layer tomatoes on top of one slice. Add crisp cooked bacon to sandwich. Place a handful of greens on the plate with the olive oil and vinegar and toss quickly to coat. Add to sandwich.
Top with remaining side of bread, toasted side facing in. Slice and devour! |

Ingredients: 1 1/2 cups mayonnaise 1 large clove garlic 1/2 tablespoon lemon juice Zest from 1/2 lemon (1/4 – 1/2 teaspoon) 1 tablespoon minced fresh basil

Directions:Place mayo in a small mixing bowl. Add zest and then juice of lemon. Press or finely mince garlic. Finely mince herbs and add to mayo mixture. Whisk until smooth.
This is best if made ahead (at least an hour) so flavors have a chance to marry and intensify. But if you need to eat it right away, go for it.
Fresh herbs are amazing, but if you want to make it with dried, the rule of thumb is 1 part dry herbs = 3 parts fresh. |

Notes: I typically make about 1/3 of a recipe (1/2 cup mayo and eyeball the rest). It's more than enough for 3-4 sandwiches!
The recipe is slightly adapted from Our Best Bites. It's a little more work to make than a traditional BLT (and often quite messy to eat), but this sandwich is worth it!
