2 c. oil
2 eggs
1 tsp. vanilla
2 oz. red food coloring
2 1/2/ c. cake flour
1 tsp. baking soda
1 tsp. salt
1 TBSP. Cocoa
1 c. Buttermilk

Directions:
Directions:
Preheat oven to 350 degrees. Mix sugar, oil and eggs together. Sift together flour, salt, and baking soda. Add it to mixture and blend well. In a seperate bowl, mix the cocoa, vinegar and red food coloring together. Pour into mixture. Add the buttermilk and vanilla. I use a little of the milk to rinse out the food coloring mixture bowl. Pour it into batter and mix well.
Place batter into well greased and floured cake pans and bake for 30 to 40 minutes. Completely cool layers before applying the icing.

1 stick margerine or butter
8 oz. cream cheese
1 tsp. vanilla
1 box of powdered sugar
1 c. chopped nuts

Directions:
Soften butter or marg. and beat with cream cheese until smooth. Add vanilla and powdered sugar. (if icing is too thin, add more powdered sugar) Stir in pecans. Apply to cooled cake layers and store in refrigerator.
