2-4 t peanut oil
4 large garlic cloves, minced (optional)
1/4 t ground ginger
2 cans chicken broth
4 T smooth peanut butter
4 T soy sauce (can use low sodium if you like)
1 T rice vinegar
1 t sesame oil
1/4 t crushed red pepper flakes
1/8 t + ground red cayenne pepper
4 minced green onions
1/2 pkg vermicelli noodles, cooked
2 oz. whole cashews, shelled
6 chicken breast halves

Directions:
Directions:
Sauté ginger and green onion in peanut oil briefly (about 30 seconds). Add remaining ingredients except chicken, vermicelli and cashews. Bring to boil. Reduce heat stirring constantly until sauce is smooth and thickened about 3 minutes. Add chicken, stir to combine and cook until chicken is tender (about 15 minutes). Add vermicelli and cashews. Heat and serve.
