Dry Pancake Mix


Ingredients:

4 c. all-purpose flour
3 tbsp. baking powder
3 tbsp. sugar
2 tsp. baking soda
1 tsp. salt

Directions:
Directions:
Mix all ingredients together with a whisk to ensure it is thoroughly blended. Store in an airtight container in the cupboard.

*I usually double this recipe and store in a large glass jar.
 

Pancake Batter


Ingredients:  
Ingredients:  
1 c. pancake mix from above
1 egg
1 c. milk
1 tbsp melted butter or vegetable oil
vanilla (measure with your heart)
cinnamon (measure with your heart)

Directions:
Directions:
Whisk all ingredients together in a medium sized bowl. Heat frying pan to medium heat. Wait until the pan is thoroughly hot. Pour out mix into pan in desired size of pancakes. Fry until lots of bubbles form at the top of the pancake. Flip and fry a couple more minutes. Remove from heat and enjoy!

*I usually double this recipe and get approx. 12 medium sized pancakes (I use a 1/3 measuring cup to measure out the batter for each pancake.)

We have had to make a lot of recipes from scratch vs. buying premade mixes in the grocery store since Emma cannot have dairy, nuts or gluten. This recipe can be made with non-dairy milk (we use Rice Milk) and Gluten Free flour (I usually use Bob's Red Mill 1 to 1 Baking Flour or the Walmart brand, Great Value Gluten Free flour). This recipe is a staple in our household!
