1 lb. kidney beans or Swedish brown beans
3/4 cup light brown sugar or more if desired
1 cinnamon stick (don't use ground cinnamon)
2 tsp. salt

Directions:
Soak beans 8-10 hours. Rinse and bring beans, with water to cover, to a boil over medium high heat, Skim foam and add cinnamon stick, salt, and sugar. Simmer covered about 1 hour until beans are tender but not mushy. Add to slow cooker and cook on low about 10 hours..Turn off and let rest 4 -5 hours. Stir gently and reheat on high 1 - 2 hours before serving.

If not using a slow cooker simmer about 2 -3 hours, stirring occasionally.

I soak beans the day before from 8 AM-6 PM. I prepare in early evening and put in slow cooker about 9 PM. Beans cook on low , all night until about 9 or 10 the next day. Turn cooker off. Reheat on high for 1-2 hours before serving.
