6 center cut loin pork chops, well trimmed
1 cup flour
2 tsp salt
3 tsp pepper
1 1/2 Tbsp ginger
1 Tbsp nutmeg
1 tsp ground thyme
1 tsp sage
1 Tbsp paprika
1/2 tsp cayenne pepper
2 eggs
4 Tbsp water
2 Tbsp olive oil
3 - 4 cloves garlic, minced
canola oil
1 cup honey
1/4 cup soy sauce

Directions:
Directions:
Combine the flour, salt, 2 tsp pepper, ginger, nutmeg, thyme, sage, paprika, and cayenne pepper.
Whisk together the eggs and water.
Season the pork chops with salt and pepper, dredge in the flour mixture, dip into the egg wash, and then dredge again in the flour mixture.
Heat about 1/2-in canola oil in a skillet, fry the pork chops for 4 - 5 minutes per side, until golden brown and crispy, and drain on a wire rack.
Cook the olive oil and garlic over medium heat until the garlic is softened but not browned.
Add the honey, soy sauce, and remaining pepper, simmer for 5 - 10 minutes, and remove from heat
Cool, then dip the pork chops into the sauce and serve with rice.
