Memphis Style Ribs Recipe

1/4 cup paprika
1 1/2 Tbsp pepper
1 1/2 Tbsp brown sugar
1 Tbsp salt
1 1/2 tsp celery salt
1 1/2 tsp cayenne pepper
1 1/2 tsp dry mustard
1 1/2 tsp garlic powder
1 1/2 tsp cumin
4 - 6 lb pork ribs
1/4 cup mustard
1 cup cider vinegar
1 tsp salt

Directions:
Directions:
Combine the paprika, pepper, brown sugar, salt, celery salt, cayenne pepper, dry mustard, garlic powder, and cumin.
Rub 2/3s of the mixture over all surfaces of the ribs.
Place them in a large pan or baking dish, cover, and refrigerate for at least 4 hours.
Heat the grill.
Whisk together the mustard, vinegar, and salt.
Arrange the ribs on the grill over indirect heat, close, and cook for 1 hour.
Baste with the sauce, then cook 30 minutes more, basting frequently.
Sprinkle with the remaining rub when done cooking.
