4 pork chops, cut 1 1/2-inch thick
salt and pepper
2 Tbsp butter
1/2 cup chopped onion
1 cup chopped mushrooms
1/4 tsp salt
1/4 tsp sage
1/4 tsp pepper
1 cup breadcrumbs
2 Tbsp broth

Directions:
Directions:
Heat oven to 350’.
Trim the fat from the pork chops, cut 2-inch deep pockets into each one, and sprinkle the inside of each pocket with salt and pepper.
Sauté the onions and mushrooms in the butter over medium heat.
Remove from heat and stir in the salt, sage, and pepper with the breadcrumbs.
Add enough broth to hold the stuffing together.
Spoon the mixture into the pork chops and secure with kitchen twine or toothpicks.
Place the pork chops in a baking dish and add the remaining broth.
Cover and bake at 350º for 30 minutes, then uncover and bake 20 minutes more, until tender and cooked through.
