Southern Pecan Pie Recipe

8 TBSP Butter, cut into pieces
3/4 c. packed dark brown sugar
1 tsp. salt
3 large eggs
3/4 c. dark corn syrup
1 TBSP. vanilla
2 TBSP. Bourbon Extract
2 c. whole roasted pecans (chopped)

Directions:
Directions:
Preheat oven to 275 degrees. In a saucepan, cook butter, brown sugar and salt on medium heat until sugar is melted and butter is absorbed. This takes about 2 minutes.
Remove from heat and whisk in eggs one at a time. Then whisk in syrup, vanilla and bourban extract. Return pan to stove and at medium heat stir constantly until mixture is glossy and warm to touch, about 4 minutes. DO NOT OVER HEAT. Remove from heat if mixture begins to steam or bubble. Tempture should be about 130 degrees. Remove from heat and add chopped pecans.
Bake for 45 to 60 minutes. Center should be soft and when pressed should jiggle like gelatin. Cool pie completely and serve at room temperature with ice cream or whipped topping.
