16 oz baby carrots
20 oz frozen chopped broccoli, thawed
8 oz Velveeta, cubed
3/4 cup butter
1 3/4 cups crushed Ritz crackers

Directions:
Directions:
Bring the carrots to a boil in a saucepan with 1-inch of water; reduce heat.
Cover and simmer for 5 - 8 minutes, then add the broccoli.
Cover and simmer for 6 - 8 minutes more; drain.
Cook and stir the cheese and 1/4 cup of butter until smooth, then stir into the vegetables.
Melt the remaining butter, toss with the crumbs, and sprinkle 1/3 of the mixture into a greased 2 1/2-quart baking dish.
Top with half of the vegetables, repeat the layers, and sprinkle with the remaining crumb mixture.
Bake at 350º for 35 - 40 minutes.
