6 large carrots, julienned or shredded coarsely
1 cup sour cream
butter
2 Tbsp finely shredded celery
3/4 tsp dried thyme
salt and pepper

Directions:
Directions:
Sauté the carrots in plenty of hot melted butter.
Add the celery and thyme and heat to the boiling point.
Season with salt and pepper, remove from heat, and stir in the sour cream.
Reheat to just below boiling and serve.
