2 1/2 - 3 lbs parsnips, unpeeled
salt and pepper
6 - 8 Tbsp butter

Directions:
Directions:
Cook the parsnips in a good amount of boiling salt water for 20 - 45 minutes, depending on the age and size of the parsnips, until they are easily pierced with a skewer or the point of a small knife.
Plunge into cold water.
When cool enough, peel and slice very thin.
Sauté in butter for 5 - 6 minutes and season with salt and pepper.
