Chicken Diablo Recipe

Chicken thighs, boneless and skinless--about 3 lbs.
4 tablespoons (½ stick) butter or margarine
½ cup honey
¼ cup prepared mustard
1 tsp salt
1 tsp curry powder
dash of soy sauce

Directions:
Directions:
Preheat oven to 375º.
If chicken thighs are not skinless, remove skin, rinse pieces, and pat dry.
Melt butter in shallow baking pan; stir in remaining ingredients.
Roll chicken pieces in butter mixture to coat both sides.
Arrange chicken pieces, meaty side up, in same pan.
Bake for 1 hour, or until chicken is tender and glazed. Baste occasionally with sauce.

Serve with rice, green vegetable and extra sauce. A side of fruit is good with this.

I've made this recipe for many years--it's my daughter Elizabeth's favorite! You can use chicken breasts instead, but chicken thighs are juicier.

What makes it Chicken "Diablo"? It's the mustard--makes the sauce a little bit spicy.
